Jamaican Curried Rice 2t olive oil
1c diced red bell pepper
1/2c sliced green onion
2T curry powder
3c hot cooked rice
1/2c Equal (I used sugar...we hate Equal LOL)
2T lime juice
1/2t salt
1 can (20 oz) pineapple chunks, drained
1 can (15 oz) black beans, rinsed and drained
1/2c salted cashews
Heat oil in medium skillet. Cook and stir bell pepper and onions 2 to 3 minutes.
Add curry powder, stir 30 seconds.
Combine cooked rice, Equal (or sugar), lime juice and salt in medium bowl.
Stir in cooked vegetable mixture, pineapple and black beans.
Rice may be served warm or at room temperature. Sprinkle with cashews just before serving.
