In addition to baking (the muffin post above LOL), this time of year I really love to cook. The problem with that is, we get fat every winter. HAHA!! So this year I decided to search for recipes that are low calorie as well as yummy. My first recipe we're trying is for Lasagna Rolls. They don't have any meat...just ricotta cheese, monterey jack cheese, and black beans, along with some seasonings. Oh, and I cheated a bit and sprinkled the top with parmesan cheese.Here's the recipe...I got it from the Jenny Craig website.
Black Bean Lasagna Rolls
1c shredded reduced-fat Monterey Jack cheese
1 (15 oz) carton part-skim ricotta cheese
1 (4-1/2 oz) can chopped green chiles, drained
1/2 tsp chili powder
1/8 tsp salt
8 lasagna noodles, uncooked
2c canned drained black beans
vegetable cooking spray
1 (15-1/2 oz) jar salsa (I used tomato sauce)
16 fresh cilantro sprigs (optional)
Combine first 5 ingredients, stirring well.
Cook lasagna noodles according to package directions, omitting salt & fat. Drain well.
Spread cheese mixture over one side of each noodle. Spoon black beans evenly over cheese mixture. Roll up noodles, jellyroll fashion, beginning at narrow ends.
Plase lasagna rolls, seam side down, in an 11"x7"x1-1/2" baking dish coated with cooking spray. Pour salsa over rolls. Cover and bake at 350 degrees for 25 minutes or until thoroughly heated. Garnish with cilantro sprigs, if desired.

Yummy!!! That looks sooo good. I went from cooking heart healthy diet,then chemo healthy diet (eat anything that's fattening & NO fresh fruit or veggies) and just yesterday they changed DJ's diet to fresh food (no meat, no white refined flour or sugar) so hoping I can get my weight back down on this diet.
This is a "must try" for our family. We love this kind of stuff. Move over soup diet! Here comes some really tasty meals.
